
Peanut Butter and jelly is hands down the best combination ever made.. and yes I’m a little biased. Anytime a breakfast includes peanut butter, I’m on board! French toast is such a yummy treat in the mornings and this was just another level of delicious. I’ve really been into making my own homemade jams, especially when it’s berry season! It takes literally 10 minutes on the stove and is as simple as strawberries, chia seeds, and lemon juice on a high heat. I find that when the fruit is ripe, I need no added sugar because the berries are already so sweet. I added a bit of twist to this stuffed french toast by adding some sliced bananas and let me tell you, this is everything! I absolutely love when bananas caramelize because they just get so oooey gooeey and delicious! You can use any bread that you like as well. Personally, I used multigrain but sourdough and wheat work great too.
Ingredients
2 slices bread of choice
peanut butter
1/2 banana sliced
strawberry jam
1 egg
2 tbsp almond milk
cinammon
Starting by spreading a generous layer of peanut butter on one slice of bread. On the other slice, spread the strawberry jelly till covered. Place banana slices on top of jelly and put the sandwich together. In a bowl, whisk one egg with a dash a cinnamon. Completely soak both sides of the bread in the egg mixture. Heat a pan with some coconut oil and place french toast. Allow it too crisp on both sides for a couple minutes. You can add some maple syrup on top or even extra bananas like I did. Either way it’s so tasty!
