
These 3 ingredient pancakes are so simple to make and such a wholesome breakfast. I love oatmeal in the mornings because it’s so easy to digest and full of fiber! The pancakes have three basic ingredients.. banana, egg, and oatmeal. I add this to my high speed blender and have the most perfect pancakes in less than 10 minutes. The pancakes are sweetened with banana, so you don’t have to add much extra sugar! If you’re a college student like me or a busy gal, you know how important quick recipes are! One of the most important things to me when it comes to pancakes is having the right texture and these don’t lack it at all! They are thick, fluffy, and most importantly don’t break when flipping. If you’ve ever tried to make healthy pancakes, you’d know what I mean! Pancakes are another favorite breakfast of mine because you can customize them to whatever you like! This is always great for me because I love cooking for others! The recipe makes approximately 2-3 large pancakes or 5-6 smaller ones. For these pancakes, I decided to top mine off with some homemade blueberry chia jam and a drizzle of almond butter!

Ingredients
1/2 cup rolled oats
1 banana
1 egg
cinnamon to taste
Add the oats, banana, egg, and cinnamon to a high speed blender. Blend till you reach a smooth and relatively thick texture. If your batter is too thick, adding some almond milk or any milk of choice can help thin them out. Add some coconut oil to a heated non stick pan and add a scoop of. batter. Cook each side for about 2-3 minutes and flip. They should be golden brown when done. Top with your favorite toppings and enjoy!
