
I love cookies and that is absolutely not an understatement! I’ve always considered cookies to be the best comfort food because they just make my heart happy! These flourless almond butter cookies were actually an unplanned occurrence. I was nearly at the end of my almond butter jar and reached that terrible hard leftover part. If you use nut butters, you know how annoying that is! So I decided to do what I do best when I have things I need to use up.. BAKE! These cookies are completely flourless, so they have the most pillowey soft inner texture! Also, they’re completely gluten and grain free! The best part is that you only need 5 ingredients to make these and it can all be mixed in one bowl! Who doesn’t love less dishes?! I decided to drizzle mine with some chocolate, but feel free to use any mix ins. You can even make flourless chocolate chip cookies by adding some chocolate chips to the batter! Trust me, these will fly right off your kitchen!
Ingredients
3/4 cup almond butter
1/2 cup light brown sugar
1 egg
1/2 tsp baking soda
1 tsp vanilla extract
1/2 cup chocolate chips (for drizzle)
1/2 tsp coconut oil (for drizzle)
Preheat oven to 350 degrees. Mix the egg and sugar first for 2-3 mins and let it lighten in color. Mix in vanilla and baking soda. Add the almond butter last and mix. Use a large tablespoon to drop cookies on a lined baking sheet. Bake for 8-10 mins or till outsides are brown. Heat up chocolate chips and coconut oil in the microwave for 45 seconds if you want to drizzle chocolate. Make sure the cookies are completely cooled before doing so.
