
There is literally never a bad time for cookie dough! As a child, my mom usto yell at me every single time that we would bake cookies because raw cookie dough was just so delicious! Luckily, the day I can eat raw cookie dough is finally back with these no bake chickpea cookie dough bars! I know the concept sounds a bit different, but I can not even explain how good these things are! They are vegan, gluten free, and refined sugar free! I love using chickpeas in dessert recipes because they have a very mild taste that works so well in sweet treats. If you’ve never used chickpeas in dessert recipes, you are in for a real treat! Also, chickpeas are packed with protein and other nutrients which makes this even more perfect! Who doesn’t love nutrient dense yummy desserts?! I personally like cashew butter because it is a relatively mild nut butter, but any nut butter of choice will work. No bake recipes are perfect because they require minimal effort and are so easy to make! The cookie dough itself took less than 5 minutes to make and I simply just added all the ingredients to a food processor! For the chocolate layer, I used some dairy free chocolate chips and heated them at a low heat with some coconut oil! These will last months in the freezer as well!
Ingredients
1 can chickpeas
1/3 cup cashew butter
1 1/2 cups rolled oats
1/3 cup coconut sugar
3 tbsp coconut oil
1 1/2 tsp vanilla extract
1/4 tsp baking soda
1/4 tsp salt
1 cup chocolate chips
water as needed
Add the chickpeas, cashew butter, rolled oats, coconut sugar, coconut oil, vanilla extract, baking soda, and salt to a food processor and blend on high. Add water if needed to thin out the mixture slightly. Be careful not to add to much water because you want to keep the mixture thick! Line a loaf pan with parchment paper and gently press the mixture. Place in the freezer while you make the chocolate layer. Melt chocolate chips and 1 tbsp coconut oil on a low heat and stir frequently. You want to make sure that all the chips have melted, but don’t overheat it! Pour the chocolate layer over the cookie dough and freeze for 2-3 hours. Before cutting, let the bars sit out for 10 minutes so that cutting is easier! Cut into bars or squares!
