
Tacos are hands down one of my favorite foods to eat and I’m so excited to be sharing these buffalo cauliflower tacos with you guys! Buffalo cauliflower is a go-to order for me at any restaurant that I go to. Lucky for me, I can now recreate my favorite appetizer at home! A good buffalo cauliflower should meet two basic requirements for me.. be crispy and absolutely drenched in buffalo sauce! This recipe is so quick, easy, and meets both of my requirement haha. I decided to bake mine vs. fry because it’s just a bit of a healthier take on them! My key to baking things crispy is to make sure that the cauliflower is completely coated in olive oil and buffalo sauce! When trying to bake things crispy, you want to make sure that you don’t skimp out on oils because your vegetables will most likely burn! You can totally customize the level of heat that you prefer by adjusting the amount of sauce you add! I personally just like a lot of flavor! I also used the Siete brand grain free tortillas, but anything will work!
Ingredients
1/2 head cut cauliflower
olive oil
1 tsp garlic powder
3/4 cup buffalo sauce (any brand works)
tortillas of choice
1 avocado
romaine lettuce
homeade Greek yogurt sauce (1 tbsp Greek yogurt with lemon and water to thin)
Preheat the oven to 425 degrees and line a sheet with parchment paper. In a bowl, combine the cauliflower, olive oil till well coated, garlic powder, chili powder, and 1/4 cup of the buffalo sauce. Stir to combine and place on baking sheet for 20 minutes. Flip it halfway for an even cook. When done, heat up the remaining 1/2 cup of buffalo sauce and coat completely. Place on broil for 2-3 minutes for an even crisp. Assemble your tacos and enjoy!
