
Sandwiches are my absolute favorite lunch meal! Growing up, I usto eat sandwiches like it was my job! In fact, I might have even ate them for several meals in a day! I think we can all see that my love for sandwiches isn’t new!
I was craving a sandwich for lunch the other day and realized how long it has been since I’ve had one, so I decided to make this delicious combo! This thing is also loaded with pesto, which is probably my favorite spread ever! While you can use store bought pesto, I like to make a simple homemade kale pesto! I decided to take a twist on a classic tomato and basil sandwich that I always order out at restaurants! Instead of mozzarella, I switched it with havarti cheese and I can’t begin to explain how yummy this was! Havarti cheese in specific is a soft and melts really well in sandwiches! It also has this buttery taste that adds so much flavor!
I’ve really been enjoying simple sandwiches like this and realized that more often than not, my favorite recipes are the simplest! It also has a freshness that the tomato, pesto, and basil truly bring! I like to consider it as an”upgraded” grilled cheese! It’s just time for you to try it for yourself!
Ingredients
2 slices sourdough bread
3-4 slices havarti cheese
1 sliced tomato
handful of basil
pesto
buttery spread
Assemble the sandwich by applying a generous layer of pesto to both sides of the bread. Add the cheese, tomato, and basil topping. Spread the butter on the outer sides of the sandwich so that it can crisp up. Place in a heated nonstick skillet at medium till the cheese melts. Make sure you get both sides evenly crisp and enjoy!
