Blondie bars are one of my favorite things to make and these almond butter blondies are so rich and delicious! I honestly was having a mid-day slump a couple days ago and decided to bake a sweet treat! Little did I know that I would be coming up with this killer blondie bar recipe!
These almond butter blondies were an an absolute dream! They had the softest inner texture that was loaded with chocolate chips, while still being crisp from the outside! I used Base Culture’s Chocolate Espresso Almond Butter in my bars and it added such a a rich flavor to the bars themselves! Any almond butter you have on hand will work! A great thing about using nut butter in baking is that it helps limit the amount of additional oils that you need!
I think every mid-day slump of mine is now going to be ending in the kitchen because the best recipes are the most spontaneous! I HIGHLY recommend trying this recipe out an even making it your own by using your favorite mix ins! Trust me, a blondie bar a day keeps your heart satisfied in every way! Had to come up with a little corny pun haha!
1/4 cup coconut oil (melted)
1/2 cup almond butter (I used Base Culture’s Chocolate Espresso)
1/2 cup brown sugar
2 eggs + 1 egg yolk
2 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
1/2 cup almond flour
1/2 cup chocolate chips
Preheat oven to 350 degrees. Prepare a square baking pan and line with parchment paper. Mix the coconut oil and almond butter in a large bowl till smooth. Add in the sugar, eggs, and vanilla till fully dissolved. Once the mixture is smooth, add in the almond flour and baking powder till combined. Fold in the chocolate chips last and pour the batter into the lined pan. Top with additional chocolate chips and bake for 20-25 minutes.
