
It is officially almost September and you know what that means… PUMPKIN SEASON! For those of you that don’t know I’m a total fall junkie! I absolutely love the change in season and all the delicious eats and treats that come with it!
So I was at Starbucks the other day getting my typical coffee order and noticed that the fall pumpkin spice lattes were out! And yes, I freaked out! When Starbucks has their fall themed drinks out, that’s a signal for me to get into my fall recipes that I have been craving all year long! The first thing I had to make was definitely these pumpkin spice muffins!
Pumpkin muffins are a staple for me every single year during the fall time! They make for a delicious breakfast with a cup of coffee! Such a perfect way to start off a cozy morning! I decided to add so many warm spiced flavors to the muffins to truly give that fall feeling.. even thought I live in sunny Southern California! While I can’t change the weather, I sure can change the mood in my house!
The muffins themselves are not overly sweet and the perfect balance of flavor. I used whole wheat flour and it was a great texture, while the Greek yogurt helps keep them soft! The icing on this was a simple maple sugar glaze that I absolutely love. While it’s completely optional, I HIGHLY recommend adding! I promise you that these delicious muffins will leave your house smelling like a dream!
Ingredients
2 1/2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp cloves
3/4 cup melted coconut oil
1 cup pumpkin puree
1 cup Greek yogurt
1 egg
2 tsp vanilla extract
3/4 cup coconut sugar
Glaze
1 cup powdered sugar
2 tbsp maple syrup
water as needed

Preheat the oven to 375 degrees. In a large bowl, add the flour, baking powder, baking soda, salt, and spices and mix them together. In another bowl, add the coconut oil, pumpkin puree, Greek yogurt, egg, vanilla extract, and coconut sugar. Mix with a handheld blender or whisk till smooth. Add the wet ingredients to the dry and fold together. Spoon the batter into muffin tins. Bake for 15-18 minutes or till golden brown. Let them cool down before you glaze them.
