Fudgey, oooeey gooeey brownies for the perfect sweet treat! Made with rich dark cocoa powder and simple ingredients for an easy + healthy take on brownies!
I know we all love brownies, I mean how could you not?! They’re chocolatey, fudgey, and so oooey goeey! If I had to rank my favorite desserts, which I hope never happens, brownies would easily be at the top! I decided to take a twist on my classic brownie recipe and I think it’s been one of my greatest ideas! Also, brownies taste a lot better when refined sugar free!
I personally have always loved marshmallows and I think it is largely due to the fun texture that they add to anything! As I was baking my normal batch of brownies, I decided to use up some leftover marshmallows I had in my pantry. All I have to say is… “WHY DIDN’T I THINK OF THIS SOONER!” In this recipe, I used gelatin free marshmallows but feel free to use any!
These brownies have the most fudgey inside texture and a rich dark cocoa flavor. The addition of the marshmallows added an extra touch of softness! Topped with a drizzle of dark chocolate, I’m so ready to make my next batch of these!

- Yield: 9 Brownie Squares
1 cup coconut sugar
1/3 cup almond flour
2 tbsp coconut flour
2 tbsp dark cocoa powder
2 tbsp water
1 tsp vanilla extract
1 cup dark chocolate chips
1/2 cup coconut oil
Preheat to 325 degrees. In a bowl, combine egg and coconut sugar with a hand mixer. Beat on high until it is fluffy. This should take about 3-5 minutes. Add in the almond flour, coconut flour, cocoa powder, water, and vanilla extract. Stir this till combines. In another bowl, add 1 cup chocolate chips and coconut oil. Microwave on a high speed for 30-45 seconds. Once the chocolate has mostly melted, stir it together and add to brownie mixture. Line a 9×9″ pan with parchment paper and pour the brownie batter in. Bake for 35 minutes or till a toothpick comes out clean. Add the marshmallows and place back into oven on broil for 2 minutes! Remove and add extra chocolate drizzle!
