Festive peppermint double chocolate chip cookies for the perfect holiday treat! Paleo & gluten free makes these the most decadent chocolate treats!

There is no holiday season complete without chocolate peppermint treats! There’s also no season without cookies! So of course I had to combine the two! I have to say that candy canes in anything just make me so happy.. it feels like it’s almost Christmas! Anyone else like that?
I decided to have some fun with baking and made these scrumptious double chocolate chip cookies the other day. For those of you that know, I am a HUUUGEE chocolate girl and love baking chocolate treats! Trust me, it’s good for the heart & soul!
And because I’m One Healthy Avocado and like to take my own healthified twist on a good ol’ classic recipe, these delicious cookies are both paleo and gluten-free! While I personally don’t follow any sort of diet, I sure like to experiment with things so that all my followers can find recipes!

- Yield: 8 cookies
1/2 cup almond butter
1/2 cup coconut sugar
1/2 cup chocolate chips
1/2 cup almond flour
1 egg
1/4 cup cocoa flour
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp sea salt
candy canes of choice
Preheat oven to 375 degrees. Whisk coconut sugar, almond butter, 1/2 cup melted chocolate chips, and egg in a large bowl. Stir in remaining ingredients, expect for the leftover chocolate chips. Add in extra chocolate chips once the batter has formed if you want. Roll the dough into 8 cookie balls and bake for 10-12 minutes. Cool completely and add crushed candy canes on top!
